SNOW CRAB SALAD

Ingredients

  • 2 1/2 pounds snow crab
  • 1 pound king crab
  • kosher salt
  • 3/4 Cup mayo
  • 1 stalk celery, thinly sliced plus a few leaves
  • 1/4 red onion, diced
  • juice of one lemon
  • zest of one lemon
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Old Bay Seasoning
  • 1 Tablespoon fresh parsley, chopped

As the winter chill is fading here in North Carolina, I am starting to crave salad. Yesterday, I had a thought to try my hand at a crab salad recipe. However, I knew for certain I would not be using imitation crab meat. Do you really even know what it’s made from? There is NO crab meat in it at all. It’s white fish (usually pollock), added with fillers and dyed to make it imitate real crab. Imitation crab meat is a less expensive alternative.

So, if you do not want to go about making Snow Crab Salad Recipe with real crab, use the imitation. Just do not tell me about it. Haha! We will get more into this later. Be sure to see below how you can make this into a Spicy Snow Crab Salad.

REAL SNOW CRAB VS IMITATION CRAB STICKS

As mentioned above, you really should use real snow and/or king crab meat in this salad. Additionally, if you also like shrimp and/or lobster, throw it in here and make it a Seafood Salad. The title may be a bit deceiving as I not only used snow crab, but a few king crab legs, as well. Feel free to use all snow crab meat. Just be sure to grab the jumbo snow crab legs. You definitely want big pieces of crabmeat in this salad.

Let’s talk yield. I used two and one-half pounds of snow crab legs and just under a pound of king crab. It yielded just under a pound and a half of usable crab meat.

Did you know that crab legs are already cooked when they reach the consumer? Reheating is basically up to you. For this recipe, I encourage boiling a pot of water with a bit of kosher salt. Toss in the frozen, or thawed crab legs for just a few minutes to warm through. Try not to “cook” too long as this can cause the meat to become too dry.

IMITATION CRAB MEAT (CRAB OR SEAFOOD STICKS)

As stated earlier, only use imitation crab sticks or seafood sticks, if that is all you have available. Imitation crab meat (crab sticks) is typically a minced fish (pollock) that has been processed and combined with other ingredients to form a stick. Be cautious as there is a significant difference in nutritional value when comparing real crab meat to imitation.

Although the calorie count may be similar for the same serving portion, imitation crab meat contains a fair amount of carbohydrates and has about one-third of the protein of real crab meat. If you are following the keto diet, a three-ounce serving of imitation crab meat contains about 13 grams of carbohydrates. See, a few more reasons to use real snow crab meat.

HOW TO REMOVE CRABMEAT FROM THE SHELLS

Be as meticulous as you can when taking the crab meat out of the shells. This will allow for larger pieces of meat in your salad. Using kitchen shears can be quite valuable. Avoid pounding the crab legs to cut open the shell. Use all of the knuckle and claw meat too! Grab a helper if you can!

CRAB SALAD INGREDIENTS

Keep the add-ins very simple. Normally, for any salad, I would dice my celery super tiny. However, I felt like very thin slices would be perfect. This was exactly the same slicing technique I used for my Italian Seafood Salad. Chop up a bit of the celery leaves, too. Also, I am a huge fan of red onion. Tiny dices complimented this Snow Crab Salad Recipe, just beautifully.

Mayo is the base of the dressing elevated with a bit of lemon juice and lemon zest for brightness. Of course, I could not leave out the Old Bay Seasoning. Just a touch is all you need.

SPICY SNOW CRAB SALAD

Optionally, you could just add tabasco sauce, or a touch more of the Old Bay Hot Sauce.

HOW TO SERVE SNOW CRAB SALAD

Description

For a super light and refreshing meal, make this Snow Crab Salad. The sweetness from the crab combined with the perfect dressing will make your taste buds so very happy!


Ingredients

Scale
  • 2 1/2 pounds snow crab
  • 1 pound king crab
  • kosher salt
  • 3/4 Cup mayo
  • 1 stalk celery, thinly sliced plus a few leaves
  • 1/4 red onion, diced
  • juice of one lemon
  • zest of one lemon
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Old Bay Seasoning
  • 1 Tablespoon fresh parsley, chopped

FOR THE OLD BAY SEASONING HOT SAUCE CAVIAR (Optional)

  • 1/3 Cup Old Bay Seasoning Hot Sauce 
  • 1 gram agar agar

Instructions

  1. Boil the crab legs in salted water for about five minutes. Remove and allow to cool.
  2. Remove the crab meat from the shells. Cut into pieces. Reserve.
  3. In a separate bowl, combine the mayo, lemon juice, lemon zest, kosher salt, black pepper, Old Bay seasoning, celery and red onion. Mix well.
  4. Fold the crab into the dressing, very gently.

  6. Garnish with the caviar and fresh parsley.
  7. Serve with crackers, in a roll, or with toast points.
  8. ENJOY!
