If you know anything about me by now, you know I love the combination of sweet and salty. This Shallot Bacon Jam is all that, and more. It combines perfectly caramelized shallots with maple syrup and brown sugar to provide all the sweet. The addition of crisp salty bacon and a touch of heat, sent this recipe over the top. Goodness in every single spoonful.

WHAT ARE SHALLOTS?
Shallots are part of the allium family. They are a type of onion. Shallots are more elongated than your typical round onion. The bulb-like appearance resembles garlic. Most smaller shallots have two to three bulbs. Each clove is flat on one end and round on the other end.
WHAT DO SHALLOTS TASTE LIKE?
Shallots have a mild taste compared to onions, leeks and chives. Think of a sweet, garlic flavor profile. Shallots are equally good for cooking, and enjoying raw.
Most often shallots can be substituted for onions. Typically, three bulbs of shallots equal one onion. Yellow onions would be a great alternative. However, the opposite will only hold true if the shallots are to be cooked. Raw onions are NEVER a good substitute for raw shallots.
HOW TO SLICE SHALLOTS FOR SHALLOT BACON JAM
Peel the copper colored skin from the shallot. Cut off both ends of the shallot. Peel off the thin skin. Begin at one end, thinly slicing the shallot using a sharp knife, or sharp paring knife. This technique will produce a thin, ring-like shape.
TIPS ON HOW TO CARAMELIZE SHALLOTS AND ONIONS
The key to caramelizing shallots or onions is PATIENCE! The shallots or onions, need to cook on a medium-low heat, very slowly. Believe me, caramelizing onions for my French Onion Soup, takes almost an hour. You can expect close to a half hour for the shallots.
Basically, you only need a bit of fat and a touch of salt, to get the caramelization process going. As the shallots start cooking, they will release their natural sugars creating a deep rich brown color, and sweet flavor. Be sure to mind the pan as the shallots are caramelizing. The natural sugars from the onions can burn rather quickly.
HOW TO MAKE THE BEST ONION JAM
So, feel free to substitute onions for the shallots in the recipe. My preference in many of my recipes is shallots. A few more tips to making the most perfect Shallot Bacon Jam, include:
- use thick-cut bacon diced into small, equal pieces
- cook the bacon to super crispy
- do NOT rush the process of caramelizing the shallots, or onions
- use a high-quality maple syrup
- for a little heat, add a touch of crushed red pepper flakes
HOW TO SERVE SHALLOT BACON JAM
If you can refrain from devouring this Shallot Bacon Jam by the spoonful, here are a few ideas on how to serve up this goodness:
- toasted baguette
- in a tart with brie cheese
- on crackers or toast
- top on a burger
- as part of a charcuterie board
- in a grilled cheese
- use in a salad dressing
- add to roasted vegetables
- in an omelet, or breakfast sandwich
- with your favorite cheese

Description
If you love sweet, salt and savory flavor profiles, you are going to fall in love with this recipe for Shallot Bacon Jam. It’s relatively easy to prepare and can be enjoyed alone on toast or crackers, or serve up in a tart.
Additionally, top this Shallot Bacon Jam on a burger, or elevate your next grilled cheese.
Ingredients
- 5 slices thick-cut bacon, diced
- 10 shallots, sliced thin
- 1/2 tablespoon butter
- 1/2 teaspoon kosher salt
- 1 teaspoon fresh thyme leaves
- 1/3 cup light brown sugar
- 1/4 cup maple syrup
- 1 teaspoon apple cider vinegar
- 1 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional)
Instructions
- Crisp up the diced bacon.
- Remove from pan.
- Turn down the heat to medium-low.
- Add the sliced shallots to the bacon fat.
- Cook low and slow until the shallots have caramelized. Stir often. (This may take at least a half hour).
- Add the brown sugar, maple syrup, crisp bacon, apple cider vinegar, black pepper and crushed red pepper to the caramelized shallots.
- Stir and allow the mixture to thicken to a jam-like consistency. This should only take a few minutes.
- SERVE and ENJOY!
