Honestly, using skin-off salmon, or skin-on is a matter of preference. If you decide to keep the skin-on, here’s how you will prepare the salmon.
Achieving crispy salmon skin requires the right technique, and a bit of patience. Despite what others may do, my technique involves searing the salmon, flesh-side down, first. Here are a few tips to help you achieve that crispy skin:
- Pat the salmon dry with paper towels. Moisture is the enemy of crispiness.
- Score the skin using a sharp knife. Making shallow scores on the skin helps prevent the skin from curling.
- Use medium-high to high heat. Add the salmon only after the pan and oil have been heated and shimmers.
- Chose the right oil. Use an oil with a high smoke point, such as vegetable, canola, avocado or grapeseed oil.
- Place the salmon flesh-side down, or skin-side down.
- Do NOT disturb the salmon until ready to flip.
- Be patient.
- Flip and finish cooking the salmon filet until the skin is crispy. This should only take a few minutes.
- After cooking and to preserve the skin’s crispiness, blot the salmon skin to absorb any excess grease oil

Ingredients
- 2 (6-8 ounce) salmon fillets, skin-off
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 tablespoon olive oil or avocado oil
For the Lemon Butter Garlic Sauce:
- 4 tablespoons butter
- 3 garlic cloves, minced
- 1/4 cup white wine
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh chopped parsley
Instructions
- In a small saucepan, melt the butter over medium heat.
- As the butter is melting, add the minced garlic. Cook the garlic for about a minute until it becomes fragrant, but be careful not to let it brown.

- Carefully flip the salmon fillets. Reduce the heat to medium. Cook for an additional 3-4 minutes on the other side, or until the salmon is cooked to your desired level of doneness.
- Once the salmon is cooked, transfer it to serving plates.
- Finish the lemon butter garlic sauce by stirring in the chopped parsley.
- Taste and adjust the seasoning, if necessary.
- Drizzle the lemon butter garlic sauce generously over the seared salmon fillets.
- Serve immediately, accompanied by your favorite side dishes such as roasted vegetables, rice or salad.
