- 1 pound peeled and deveined, tail-on shrimp (16/20)
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon olive oil
- 12-ounces dried spaghetti
- 1 tablespoon olive oil
- 3 tablespoons butter
- 1 cup cherry tomatoes
- 4 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes
- 1/2 cup white wine
- 2 tablespoons fresh chopped parsley, plus more for garnish
- 2 tablespoons fresh torn basil, plus more for garnish
- Olive oil to drizzle for garnish
- Cracked black pepper for garnish
Instructions
- Place the shrimp in a bowl, drizzle with olive oil and season with a pinch of salt and pepper. Set aside.
- Heat olive oil and butter in a sauté pan over medium heat. Add the cherry tomatoes and minced garlic. Season with salt, pepper and crushed red pepper flakes.
- Once the tomatoes start to burst, start boiling the pasta to al dente.
- Pour the white wine into the tomato mixture and simmer for 1-2 minutes.
- Add the seasoned shrimp to the pan and cook gently until they turn pink, and are no longer translucent.
- Stir in the fresh basil, parsley and lemon zest.
- Transfer the cooked pasta onto individual plates, or a serving platter. Pour the shrimp scampi over the pasta.
- Garnish with additional fresh basil and parsley.
- Drizzle with olive oil and sprinkle with cracked black pepper.
- Serve immediately.

Notes
- Use tail-on shrimp, or easily remove the tail.
- If you use a smaller size shrimp, they will cook more quickly than larger shrimp.
- This recipe is all about timing to ensure neither the shrimp, nor the pasta, overcooks.
- Don’t forget to salt the water for the pasta.
- Use whatever pasta shape you have on hand.
- Cook the pasta to “al dente”.
- Reserve some of the pasta water before draining the pasta, just in case you need some of the starchy water for the shrimp scampi sauce.
- Feel free to add the pasta directly from the pot into the scampi sauce.
