- 3 cans albacore tuna in olive oil, drained and rinsed slightly
- 1 stalk celery, thinly sliced
- 1/3 C celery leaves, chopped
- 1 TBLS red onion, minced
- 1 small green chili pepper, minced
- juice of 1/2 lemon
- 1 1/2 TBLS olive oil
- 1 TBLS dijon mustard
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 TBLS golden balsamic vinegar
- 1/2 C cannellini beans, rinsed and drained
Instructions
- Drain tuna from the can. Give it a quick rinse. Drain. Place in a large bowl.
- Add the remaining salad ingredients, except for the beans. Mix well. Taste for salt.
- Gently fold in the beans. Taste again for salt. See note in post.
