  • 2 cans cannellini beans, rinsed and drained
  • 3/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 cup cherry tomatoes, diced small
  • 3/4 English cucumber, diced small
  • 1/3 cup red onion, diced small
  • 3/4 cup salami, diced small
  • 1/2 cup fresh chopped parsley
  • 1/3 cup chopped fresh basil
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • 1/2 teaspoon crushed red pepper flakes, optional

 


Instructions

  • In a large bowl, combine all of the ingredients except for the beans. Mix well.
