Ingredients

  • 1 pound ground beef (80/20)
  • 12-ounces Cavatappi or elbow macaroni
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoon paprika
  • 1 tablespoon flour
  • 2 cups chicken or beef stock
  • 1 1/2 cups heavy whipping cream
  • 4-ounces Velveeta cheese
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons fresh chopped parsley, for garnish

Instructions

  1. Start by browning the ground beef in a deep saucepan. 
  2. Once fully-cooked, drain all but 2 teaspoons of the fat.
  3. Season with the salt, black pepper, onion powder, garlic powder and paprika.
  4. Stir to coat.
  5. Sprinkle on the flour. Stir and allow the raw flour taste to cook off for a minute or two.
  6. Turn up the heat and pour in the stock and heavy cream. Mix.
  7. Bring to a heavy simmer. Add the pasta. Mix.
  8. Cover. Turn down the heat. Simmer until the pasta cooks to al dente. (About 8 minutes).
  9. Add in the Velveeta cheese. Allow to melt. 
  10. Sprinkle in the shredded cheddar. Stir to melt.
  11. If the sauce seems too thick, add a touch more stock or cream. Mix.
  12. Serve immediately garnished with fresh chopped parsley.
