Heirloom Tomato Carpaccio Salad

Description

Made with a variety of colorful heirloom tomatoes, this summer salad is as visually stunning, as it is delicious. Makes for an excellent side dish, or stand alone meal. 


Ingredients

Scale
  • 3 to 4 heirloom tomatoes in a variety of colors
  • 1/2 teaspoon flaky salt
  • 1 teaspoon cracked black pepper
  • 1/4 cup microgreens
  • 3 tablespoons olive oil
  • 1 tablespoon golden balsamic vinegar
  • 1/4 red onion, sliced thin
  • 1 tablespoon pepitas

Instructions

  1. If time allows, place the tomatoes in the fridge to firm up for about an hour, or 10-15 minutes in the freezer.
  2. Using a very sharp knife, slice the tomatoes as thin as you can.
  3. Overlap the tomato slices on a platter.
  4. Sprinkle with the flaky salt.
  5. Spread out the microgreens and red onion.
  6. Drizzle on the olive oil and golden balsamic vinegar.
  7. Sprinkle on the pepitas and finish with cracked black pepper.
