Ingredients

  • 3 small heirloom tomatoes, diced small
  • 1/4 red onion, minced
  • 2 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 Tablespoons fresh basil, chiffonade
  • 3 Tablespoons olive oil
  • 2 Tablespoons balsamic vinegar
  • 1 Tablespoon golden balsamic vinegar
  • 1/4 teaspoon crushed red pepper, optional
  • FOR THE PARMESAN CRISPS
  • 12 Tablespoons Parmesan cheese

Spring is finally here! That means the opening of local farmer’s markets. As I ventured out to Unity Farms yesterday, this long table filled with heirloom tomatoes caught my attention. Right behind this beautiful bounty were fresh basil plants. So, it got me thinking about my Bruschetta recipe. Normally, I would use plum tomatoes. Also, since the Hubby is still following the keto diet, I knew bread was completely out of the question. What to substitute for the bread? Well, it was a no brainer. Parmesan Crisps would be perfect. This recipe for Heirloom Bruschetta Parmesan Crisps is my twist on a favorite. You will savor each and every single bite!

Besides the incredible flavor, this dish is perfect for a party. It’s one of those make ahead appetizers that can be assembled at party time. In my opinion, the longer all of the ingredients marry in a bowl, the more tantalizing on your taste buds.

HOW TO MAKE THE PERFECT HEIRLOOM BRUSCHETTA PARMESAN CRISPS

PARMESAN CRISPS

The odds are high that you have seen, or even made Parmesan crisps before. As soon as I posted the TikTok video to my social media outlets, I got a lot of questions about how to make them. Yes, you can buy them, but why? Also, a number of people who reached out, were a bit discouraged over their failed attempts to make them. It is crucial to use freshly grated Parmesan cheese. Do NOT use grated cheese in the container for this recipe.

Additionally, I would highly recommend baking the Parmesan cheese on parchment paper. Another key to making them super crispy, is to allow them to sit in the pan for a few minutes. After, gently peel away from the parchment and place on a cooling rack, or flat surface lined with paper towels. Either way will allow any excess oil to drain off. The longer they “cool” in this fashion, the crispier they will become.

TOMATOES AND BALSAMIC

Although this recipe does call for diced heirloom tomatoes, it’s perfectly fine to use plum, or even cherry tomatoes. Honestly, I just loved how color and vibrancy the heirloom tomatoes lent to this recipe.

To make these Heirloom Bruschetta Parmesan Crisps extra special, I used two types of balsamic. Of course, I used traditional balsamic. To bring out the natural sweetness of the tomatoes, I also add a touch of my new favorite, Delallo’s Golden Balsamic Vinegar. Honestly, it’s my new favorite vinegar. Order a few bottles. Take traditional bruschetta for a spin with this recipe for Heirloom Bruschetta Parmesan Crisps. It’s super easy to prepare and can even be made ahead of time. Great as an appetizer for your next party.


Ingredients

Scale
  • 3 small heirloom tomatoes, diced small
  • 1/4 red onion, minced
  • 2 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 Tablespoons fresh basil, chiffonade
  • 3 Tablespoons olive oil
  • 2 Tablespoons balsamic vinegar
  • 1 Tablespoon golden balsamic vinegar
  • 1/4 teaspoon crushed red pepper, optional

FOR THE PARMESAN CRISPS

  • 12 TBLS Parmesan cheese

Instructions

  1. Preheat oven to 400°.
  2. Line a baking sheet with parchment paper.
  3. Place two tablespoons of the Parmesan cheese onto the sheet pan. Flatten just a bit and form a round. Finish with the remaining five rounds.
  4. Place in oven for 5 to 6 minutes. Allow to turn a golden brown.
  5. Remove from oven and allow to sit in the pan for a few minutes. Carefully transfer each to a cooling rack or flat surface lined with paper towels.
  6. In a bowl, combine all of the ingredients for the tomato mixture. Allow to marinade for at least 10 minutes. 
  7. Layer two of the Parmesan crisps onto a plate. Top with a few spoonfuls of the tomato mixture. 
  8. Garnish with fresh basil. 
  9. ENJOY!
