- Remove the steaks from the fridge about an hour before grilling. Coat them in olive oil and season with salt and pepper.
- Cut the zucchini into 1-inch rounds, the yellow squash into spears, and the bell peppers into 1 1/2 to 2-inch strips.
- Add the vegetables to a bowl and toss with olive oil, salt and pepper.
- Heat the grill to medium-high. Grill the vegetables first, until they are slightly tender with a bit of crunch. Reserve the vegetables on the top rack of the grill while you grill the steaks.
- Turn up the heat to medium-high. Get a nice sear on both sides of the steaks. Move the steaks off the direct heat, place the lid on the grill, and finish to your desired temperature (about 3-4 minutes for medium-rare).

Ingredients
For the Steaks:
- 4 ribeye steaks
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
For the Grilled Vegetables:
- 2 medium to large zucchini
- 3 medium yellow squash
- 2 red bell peppers
- 1 yellow or orange bell pepper
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
For the Chimichurri Sauce:
- 3/4 cup fresh chopped flat-leaf parsley
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 3 garlic cloves, minced
- 1/2 teaspoon crushed red pepper flakes
- 1 teaspoon dried oregano
- 3/4 teaspoon coarse salt
- 1 teaspoon black pepper
Instructions
