GRILLED OYSTERS

Ingredients

  • 6 to 8 medium-large sized oysters (per person) (shucked in shell)
  • melted butter
  • grated Parmesan cheese
  • crispy bacon pieces
  • fresh lemon juice
  • fresh chopped parsley

So, in my research, I have found that most people either have a love, or a hate for oysters. There is really no in between. Today, I am hoping to change that. Or, if nothing else, for those haters, to give them one more go. Try my Grilled Oysters. Honestly, what a fabulous way to enjoy these briny beauties any time of the year! With so many oyster farms around the country, one can enjoy fresh oysters throughout the year. Forget about the so-called “oyster season.”

I would suggest at least six to eight oysters per person. If you are serving oyster lovers, go for about a dozen for each guest. Ask your local fishmonger to suggest the perfect oyster for grilling. Often I use either Blue Points or James River.

SHUCKING OYSTERS

If for some reason you cannot get the oysters shucked, there are two ways you can get them open. First, you can shuck them yourself. This will require the use of an oyster shucking knife. Please do NOT use a regular knife or butter knife. This will only cause you pain. I mean this both literally, and figuratively! Find the hinge. Place your shucking knife into the hinge and pop the knife up and down until the lid opens. Believe me, practice makes perfect. However, once you learn how to do this, it’s actually kind of fun.

Secondly, you can place the oysters in the oven, or on the grill. In just a few minutes, you will see them start to open. Remove and take off lid. Just note, you only want the shell to pop. Leave them on too long and they will cook through.

HOW TO PREPARE GRILLED OYSTERS

Often times, I will omit the bacon and just prepare my Grilled Oysters with no toppings (roasted oysters). Sometimes, I like them with just the butter and cheese. If you are using bacon, be sure to prep the bacon in advance. Cut the bacon into pieces and crisp up in a cast iron pan. Amount will vary depending on how many Grilled Oysters you are serving.

Heat up the grill or oven to 450 degrees. Top each raw oyster with melted butter and shredded Parmesan cheese. Place lid on grill and allow the cheese to bubble up and brown. This should take about five minutes, or so.

TO FINISH AND SERVE THE GRILLED OYSTERS

Carefully remove each oyster with tongs. Place on platter Garnish with the bacon pieces (optional) and fresh chopped parsley. Serve these amazing Grilled Oysters with lemon wedges. ENJOY!
