FRIED GREEN TOMATOES

Ingredients

  • 3 green tomatoes
  • 1 1/2 cup buttermilk
  • 1 to 2 tablespoons Sriracha
  • 2 cups AP flour
  • 3/4 cup white cornmeal
  • 1/4 cup rice flour or cornstarch
  • 1 teaspoon kosher salt, plus 1 teaspoon black pepper
  • oil for frying

So, besides Buttermilk Fried Chicken, can you get any more Southern than Fried Green Tomatoes? I think not! They are truly becoming one of my favorite Southern appetizer, and side dish. Lately, I have been making it a point to try them at any restaurant serving up these beauties. However, with the abundance of fresh green tomatoes at your local farmer’s markets, how can one resist frying up this southern treat in your very own kitchen.

WHAT ARE GREEN TOMATOES?

Basically, green tomatoes are either tomatoes picked before they had a chance to ripen, or can be tomatoes that had yet to ripen by the end of the season.

What do green tomatoes taste like?

Green tomatoes have a tangy (acidic), or tart flavor. They tend to be much firmer, and less juicy than ordinary tomatoes. Cooking them tends to mellow out the flavors.

How to use green tomatoes?

Mostly commonly, green tomatoes are fried. They can also be used in soups, stews, casseroles. Additionally, they would be perfect made into a salsa, relish or even pickled.

Keep this Fried Green Tomato recipe super Southern by pairing them with pimento cheese. My local favorite, Queen Charlotte Pimento Cheese, was a perfect choice.

HOW TO PREPARE THE BEST FRIED GREEN TOMATOES

Slice the green tomatoes into 1/4″ to 1/2″ rounds.

Why should you allow the sliced tomatoes to sit on paper towels?

Although green tomatoes are not quite as juicy as ordinary tomatoes, they still contain water. By placing the sliced green tomatoes onto paper towels and allowing them to sit for at least fifteen minutes will help to ensure the Fried Green Tomatoes are not mushy. The sprinkling of kosher salt will help to draw out the excess moisture.

How to properly coat the green tomatoes

In keeping with Southern recipe traditions, the addition of cornmeal is a must. Also, for a super crunchy texture, add a touch of rice flour or cornstarch to the flour mixture.

So, I get the following question, quite frequently. How do I keep the coating to stick to the green tomato? You will notice that once the sliced green tomato is coated in the buttermilk, the buttermilk has the tendency to not want to fully coat the tomato. Place the buttermilk coated tomato slice in the flour mixture and kind of give the flour a pat down. Double-dipping, which is highly encouraged, will also help to keep coating from falling off.

In addition, be very gentle with the fry. Delicately, place the coated green tomato into the fryer. As much as you may want to, try NOT to touch until you are ready to flip.

Fry in batches. Give the tomatoes room to fry and NOT steam!

DIPPING SAUCES

So, if you can resist eating these tasty Southern Fried Green Tomatoes as soon as they come out of the fryer, pair them with any the following suggested dipping sauces:

  • pimento cheese
  • pimento cheese sauce (combination of pimento cheese and heavy whipping cream)
  • ranch dressing
  • remoulade sauce
  • horseradish sauce

A Southern favorite in your very own home. Follow my recipe to create the most perfect Fried Green Tomatoes. Keep it super Southern with a topping of pimento cheese, or pair with your favorite dipping sauce. Be sure to check out other ways to use green tomatoes!


Ingredients

Scale
  • 3 green tomatoes
  • 1 1/2 cup buttermilk
  • 1 to 2 tablespoons Sriracha
  • 2 cups AP flour
  • 3/4 cup white cornmeal
  • 1/4 cup rice flour or cornstarch
  • 1 teaspoon kosher salt, plus
  • 1 teaspoon black pepper
  • oil for frying

Instructions

  1. Slice the green tomatoes between 1/4″ and 1/2″ thickness.
  2. Place the sliced tomatoes on paper towels.
  3. Sprinkle with kosher salt.
  4. Allow the tomatoes to sit for at least 15 minutes.
  5. In a bowl, combine the buttermilk and Sriracha (hot sauce).
  6. In a separate bowl, whisk together the flour, cornmeal, rice flour, kosher salt, and black pepper. 
  7. Heat the oil in a deep cast iron pan to 350° to 375°. 
  8. Drop the tomatoes into the buttermilk mixture. Fully coat.
  9. Transfer each to the flour mixture. Double coating is encouraged. (see tips in post)
  10. Fry the green tomatoes, in batches. Do not crowd the pan.
  11. Brown on both sides.
  12. Remove and place on paper towels or a cooling rack to remove any excess oil.
  13. Salt immediately.
  14. Serve with your favorite dipping sauce and/or pimento cheese.
  15. ENJOY

FRIED GREEN TOMATO BLT

As mentioned above, I promised I would show you how to turn these Fried Green Tomatoes into one of the best BLTs you have ever tasted!

Crisp up thick-cut bacon. For me, baking bacon in the oven is key. Not only will the bacon turn out super crispy, but will also keep its shape. Toast up a few pieces of your favorite bread. Build your sandwich by placing a few pieces of lettuce on the bottom slice. Add two Fried Green Tomatoes. Place a generous amount of crisp bacon on top of the tomatoes. Top with mayo or remoulade sauce. ENJOY!
