These soufflé-style pancakes look normal on the outside, but hold a yummy secret. Perfectly cooked, oozy egg yolks are hidden in the middle. So, if you like runny eggs, this breakfast recipe is for you! This recipe should yield 5 to 6 soufflé pancakes.

Here’s the thing. I love a sweet and savory breakfast. My signature Eggs Benedict starts with dollar-sized pancakes topped with sausage patties, perfectly cooked poached eggs and Hollandaise sauce. You should try this one too!

Over the years, I have experimented with many pancakes recipes. This one is by far, a no-fail recipe. Even if you do not want to try this technique, use this flapjack recipe to make the fluffiest pancakes.

  1. Mix together the pancake batter and allow to rest for at least 10 minutes.
  2. Separate the egg yolks from the whites and place yolks in a small bowl.
  3. Heat a non-stick pan over medium heat and add 2 tablespoons of melted butter.
  4. Spray the inside of a large biscuit cutter with non-stick spray. Place in the pan.
  5. Pour a small amount of pancake batter into the cutter.
  6. Drop two egg yolks into the center of the batter, followed by more batter to cover the yolks.
  7. Allow the pancake to set for a minute or two without disturbing it.
  8. Cover the pan with a lid and let it cook for another minute.
  9. Add a tablespoon of water to the pan and cover again, allowing steam to cook the pancake and create bubbles. Just another minute, or two.
  10. Once bubbles form on the surface, carefully remove the lid and gently flip the pancake.
  11. Cook for another minute until golden brown and the egg yolks are still runny, or cooked to your liking.
  12. Plate the Egg Yolk Stuffed Pancakes topped with butter and warm maple syrup.

  • Allow the Pancake Batter to Rest: For a fluffier, soufflé pancake, allow the batter to rest for at least 10 minutes. Also, try not to over mix the batter.

Ingredients

  • 1 1/2 cups self-rising flour
  • 1 tablespoon baking powder
  • 1/8 teaspoon salt
  • 1 egg
  • 2 tablespoons sugar
  • 2 tablespoons melted butter
  • 1 1/4 cup milk
  • 1012 egg yolks
  • 2 tablespoons butter for frying

Instructions

  1. Combine the self-rising flour, baking powder, and salt in a mixing bowl.
  2. In another bowl, whisk together the egg, sugar, melted butter and milk until well combined.
  3. Add the wet ingredients to the dry. Combine without over mixing. 
  4. Set aside to rest for at least 10 minutes.
  5. Heat a non-stick pan over medium heat and add the butter. Allow the butter to melt and start to bubble.
  6. Spray the inside of a large biscuit cutter with non-stick spray. Place in the pan.
  7. Pour a small amount of pancake batter into the cutter.
  8. Drop two egg yolks into the center of the batter, followed by more batter to cover the yolks.
  9. Allow the pancake to set for a minute or two without disturbing it.
  10. Cover the pan with a lid and let it cook for another minute.
  11. Add a tablespoon of water to the pan and cover again, allowing the steam to cook the pancake and create bubbles.
  12. Once bubbles form on the surface, carefully remove the lid and gently flip the pancake.
  13. Cook for another minute to brown the other side.
  14. Plate the Egg Yolk Stuffed Pancakes. Add a touch of butter.
  15. Pour on warm maple syrup. Serve with sausage or bacon, and hashbrowns.
