Ingredients

Scale
  • 4, 5-6 ounce salmon filets (skin-off)
  • 1 1/2 cups cooked rice, for serving
  • 1012 peeled and deveined shrimp
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 23 tablespoons olive oil
  • 1 1/2 tablespoons butter
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, diced
  • 1/4 cup celery, diced
  • 2 garlic cloves, minced
  • 1/2 cup chicken stock
  • 1 1/4 cup heavy whipping cream
  • 1 tablespoon Creole seasoning
  • 1 teaspoon paprika
  • 1/4 cup diced tomatoes
  • 2 tablespoons fresh parsley, plus more for garnish

Instructions

  1. Pat the salmon dry and season on both sides with salt and pepper. Season the shrimp with a touch of salt and pepper and reserve the shrimp in the fridge.
  2. Heat the olive oil in a pan over medium-high heat. Sear the salmon on one side for about 4-5 minutes. Flip and continue searing for another 2-3 minutes. Remove the salmon from the pan and set aside.
  3. In the same pan, add the butter. Once melted, add the bell peppers, onion, celery and garlic. Sauté for a few minutes until softened.
  4. Pour in the chicken stock and heavy cream. Stir in the Creole seasoning and paprika.
  5. Allow to simmer for about 5 minutes, or until slightly thickened.
  6. Turn down the heat. Add the shrimp and diced tomatoes. Cook just until the shrimp are no longer translucent (about 2 minutes).
  7. Add the salmon back to the pan, along with fresh parsley. Spoon the sauce over the salmon and allow it to heat through for a minute.
  8. Serve the salmon and shrimp over steamed rice or grits, garnished with fresh parsley.
  9. ENJOY!

Notes

  • Chop all vegetables and measure out spices and liquids before you start cooking to streamline the process.
  • Ensure the salmon is are patted dry to achieve a better sear.
  • Don’t skimp on seasoning the salmon and shrimp with salt and pepper for enhanced flavor.
  • Use medium-high heat to get a nice sear on the salmon, creating a flavorful crust.
  • Use a pan that’s large enough to sear the salmon, without overcrowding.
  • Feel free to use any color of bell peppers (I used a combination of green and red).
  • Fresh garlic, parsley and vegetables will provide the best flavor.
  • Stir frequently to prevent the cream from scorching and ensure a smooth sauce.
  • Add the shrimp towards the end of cooking to avoid overcooking and resulting in a rubbery texture.
  • Taste the sauce before adding the salmon back in, and adjust seasonings if necessary.
