Description
Cod is a mild, flaky fish that often needs a boost of flavor to really shine. This Baked Cod with Creole Sauce is the perfect solution! The flaky, tender fish is seasoned and baked until perfectly cooked, then smothered in a rich, creamy Creole sauce with just the right amount of spice.

- 1 1/2 – 2 pounds cod, skin-off
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Lemon wedges for serving
For the Creole Sauce:
- 2 tablespoons butter
- 1/4 cup red bell pepper, diced
- 1/4 cup green bell pepper, diced
- 1/2 yellow or white onion, minced
- 3 garlic cloves, minced
- 1/4 cup celery, minced
- 1/2 cup chicken stock
- 1 1/4 cup heavy whipping cream
- 1 tablespoon Creole seasoning
- 1 teaspoon paprika
- 1 Roma tomato, diced
- 2 tablespoons fresh parsley, plus more for garnish
- Juice of 1/2 lemon
Instructions
- Preheat the oven to 375°F (190°C). Pat the cod dry with paper towels and place it on a baking sheet. Optionally, line with parchment paper.
- Combine the seasonings in a small bowl.
- Brush the cod with olive oil and rub the seasoning evenly over the fish.
- Cover lightly with foil and bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
- While the fish is baking, prepare the Creole sauce. In a large skillet, melt butter over medium heat.
- Add the red and green bell peppers, onion, garlic and celery. Sauté for 3-4 minutes, until softened.
- Pour in the chicken stock and heavy cream. Add the paprika and Creole seasoning.
- Bring to a simmer, letting it reduce slightly and thicken. Stir and scrape the sides, often.
- Remove from heat and stir in the diced tomatoes, fresh parsley and lemon juice.
- Plate the cod onto a platter or portion onto individual plates.
- Pour the Creole sauce over the baked cod and garnish with additional parsley.
- Serve immediately with lemon wedges.

Notes
- Prep all of the ingredients first.
- Replace the cod with your favorite white fish, salmon, or even chicken.
- Tent the fish with foil as it’s baking to ensure the fish remains moist.
- Try not to over bake the fish.
- Start the Creole sauce with about 10 minutes left of bake time.
- As the sauce is thickening, stir often while scraping the sides of the pan.
