The flaky, tender fish is seasoned and baked until perfectly cooked, then smothered in a rich, creamy Creole sauce with just the right amount of spice. How to Prepare Baked Cod with Creole Sauce

  1. Preheat the oven to 375°F (190°C). Pat the cod dry with paper towels and place it on a baking sheet. Optionally, line with parchment paper.
  2. Combine the seasonings in a small bowl. 
  3. Brush the cod with olive oil and rub the seasoning evenly over the fish.
  4. Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  5. While the fish is baking, prepare the Creole sauce. In a large skillet, melt butter over medium heat.
  6. Add the red and green bell peppers, onion, garlic and celery. Sauté for 3-4 minutes, until softened.
  7. Pour in the chicken stock and heavy cream. Add the paprika and Creole seasoning.
  8. Bring to a simmer, letting it reduce slightly and thicken. Stir and scrape the sides, often.
  9. Remove from heat and stir in the diced tomatoes, fresh parsley and lemon juice.
  10. Plate the cod onto a platter or portion onto individual plates.
  11. Pour the Creole sauce over the baked cod and garnish with additional parsley.
  12. Serve immediately with lemon wedges.

Alternatives to Baking the Cod

Instead of baking the cod, you could try these alternative cooking methods:

  • Pan-Seared: Heat olive oil or butter in a skillet over medium-high heat. Cook the cod for about 3-4 minutes per side until golden brown and flaky. This method gives a crispier exterior while keeping the inside tender. Easily, prepare the sauce in the same pan you used to sear the fish. Keep the fish warm in a preheated oven.
  • Grilled: Brush the cod with olive oil and season. Grill over medium heat for about 3-4 minutes per side. This adds a smoky flavor and works well with the Creole sauce.

How to Serve and Store

Cod is a mild, flaky fish that often needs a boost of flavor to really shine. This Baked Cod with Creole Sauce is the perfect solution! The flaky, tender fish is seasoned and baked until perfectly cooked, then smothered in a rich, creamy Creole sauce with just the right amount of spice.


Ingredients

Scale
  • 1 1/22 pounds cod, skin-off
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Lemon wedges for serving

For the Creole Sauce:

  • 2 tablespoons butter
  • 1/4 cup red bell pepper, diced
  • 1/4 cup green bell pepper, diced
  • 1/2 yellow or white onion, minced
  • 3 garlic cloves, minced
  • 1/4 cup celery, minced
  • 1/2 cup chicken stock
  • 1 1/4 cup heavy whipping cream
  • 1 tablespoon Creole seasoning
  • 1 teaspoon paprika
  • 1 Roma tomato, diced
  • 2 tablespoons fresh parsley, plus more for garnish
  • Juice of 1/2 lemon

Instructions

Notes

  • Prep all of the ingredients first. 
  • Replace the cod with your favorite white fish, salmon, or even chicken.
  • Tent the fish with foil as it’s baking to ensure the fish remains moist.
  • Try not to over bake the fish. 
  • Start the Creole sauce with about 10 minutes left of bake time.
  • As the sauce is thickening, stir often while scraping the sides of the pan.
