Ingredients
- 2 russet potatoes
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 4 tablespoons whipped butter
- 1/2 cup shredded cheddar cheese
- 1/4 cup crisp cooked bacon, diced
- 2 teaspoons sour cream
- 1 teaspoon cracked black pepper
- 1 tablespoon fresh chopped parsley or chives
Instructions
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- While the air fryer is heating up, give your potatoes a good scrub, and pat them dry with paper towels.
- Using a fork, poke several holes into each potato. This helps steam escape while they cook, preventing any unwanted explosions!
- Rub each potato with olive oil, making sure to coat them evenly. Sprinkle all over with kosher salt.
- Carefully place the coated potatoes into the air fryer basket. Cook at 400°F (200°C) for 30 to 40 minutes, or until the skin is golden brown and crispy, and the insides are fork-tender.
